I (Erika) grew up between the Rio Grande Valley and Tokyo. Being half Japanese and half Mexican, I have always enjoyed connecting with my cultures and trying new recipes and foods. After studying cultural anthropology at Dartmouth and working in NYC for a few years, I returned back home to the Valley. I'm excited to share my and Edwin's love for Japanese fusion food with our community. 

I (Edwin) love to eat great food. I grew up in the RGV enjoying my mom's cooking and eating at my aunt's taqueria in Nuevo León. After taking a trip to Japan, I realized my love for convenient store bentos, and after meeting Erika and bonding over our love for food, we decided to start La Casita Bento.
