2.2 Food Selection and Servings
Serving Description
Buffet Service - Foods are arranged on tables. Guests usually move
along the buffet line and serve themselves. When
their plates are filled, guests take them to a dining
table to eat.
Cafeteria Service - Guests stand in line, but do not help themselves.
They are served by chefs and/or servers from
behind the buffet line.
Blue Plate Service - The plates are prepared with a whole main course
such as meat, vegetables, and other foods which
are placed in a plate divided by ridges.
Tray Service - It is a style of service that does not make use of the
usual dining table but instead dishes and table
appointments are arranged in trays, which are
brought to the diner.
