BANANA PANCAKE
1. Mash: in a medium bowl, mash the banana until very smooth with only a few
lumps.
2. Mix: add in the flour, egg and cinnamon (if using) and mix until everything is
combined.
3. Cook: heat a medium skillet over medium heat, spray with cooking spray or add a
little butter if needed. Drop one tablespoon of batter on the skillet and let cook for
3-4 minutes or until the sides are starting to become firm and the bottoms are
golden brown. You will not see any bubbles like traditional pancakes. Flip and cook
for another 2-3 minutes or until golden brown.
4. Serve: let cool slightly and serve.
BABY MOJOS
Potatoes, thinly sliced
Homemade rolled oats flour (grind oats and pass through a sieve)
1 egg
1/2 cup olive oil
1. Boil the potato slices.
2. In a bowl, whisk the egg.
3. Dip potato slices into the whisked egg.
4. Coat potato slices with rolled oats breading and deep fry in batches for 3 to 4 minutes.
