Background of the Study
Ube, (Discorea Alata), is a staple crop in the Philippines. Ube is a
species of yam. This tuberous root vegetable originates from Southeast Asia,
particularly in the Philippines. Purple yams have greyish-brown skin and
purple flesh, and their texture becomes soft like potato when cooked. It
could either be cooked fresh or made into a flour or powder for use in many
desserts or to make vibrantly colored foods including rice, cakes, candies,
ice cream and ube jams or ube halaya (Philippines Consulate General,
2020)
Ube is highly nutritious. It is a great source of carbohydrates
potassium and vitamin C. Also rich in powerful plant compounds and
antioxidants, including anthocyanin (Valdeavilla, R. (2018)). Since Ube is
popular in the Philippines as the main ingredients of a favorite Filipino
dessert called ube halaya (ube jam). People have different taste when it
comes to foods.
The researcher wants to test and explore what is the best milk admix
to make ube halaya. The researchers commonly noticed was that many uses
condensed milk and evaporated milk.
This motivated the researchers to study the various kinds of milk:
skimmed milk, condensed milk, evaporated milk, and coconut milk as the
complement in making ube halaya. Thus, the researchers want to test the
acceptability of various kinds of milk in making ube halaya.
Statement of the Problem
Generally, the study seeks to identify the acceptability of various
kinds of milk in making ube halaya. Specifically, it seeks to answer the
following questions:
1. What is the acceptability of ube halaya in various kinds of milk according
to:
a. Teachers
b. Students
2. What are the effects of various kinds of milk to ube halaya in terms of:
a. Aroma
b. Taste
c. Texture
d. Color
3. Is there a significant difference of the various kinds of milk used in ube
halaya among them:
a. Teachers
b. Students
Definition of Terms
YAM – tuberous root with greyish-brown skin and purple flesh.
UBE – also known as discorea alata, is a staple crop in the
Philippines. Species of yam.
UBE HALAYA – also called ube jam or halayang ube is a dessert that
is prepared from boiled and mashed purple yam.

Significance of the Study
The study means to look at the possible kind of milk used in ube
halaya.
For entrepreneurs. The result of the study may guide and help them
in creating a business enterprise focused on the milk that appropriate in
making ube halaya.
For farmers. The result of the study may give the motivation and
encouragement to plant more yams for production.
For ube halaya lovers, the result of the study may encourage them to
try different kinds of milk as admix to make ube halaya.
To those who are interested to sell or start a business on ube halaya,
the result of the study may give them ideas on what is the best milk to use.
Scope and Limitations of the Study
This research will be conducted at Cervantes National High in
Cervantes, Ilocos Sur to be applied with 10 teachers and 10 students from
that school for the school year 2022-2023. It deals with the different milk
use in making ube halaya as well as it’s acceptability.
