Welcome to Switzerland, Aleph Farms!👋 Israeli food tech pioneer Aleph Farms has signed a deal to produce its cultivated meat in Europe, setting up at The Cultured Hub facility in Kemptthal, near Zurich. As it awaits regulatory approval in Switzerland, Aleph Farms has chosen the canton of Zurich as the European production hub for its cultivated beef.   The Israeli startup has teamed up with The Cultured Hub, a biotech facility situated in The Valley in Kemptthal, opened last year by retail giant Migros-Gruppe / Groupe Migros / Migros, flavor specialist Givaudan, and equipment manufacturer Bühler Group.   The move is part of Aleph Farms’ localised production strategy, and marks a key milestone for its international expansion. Fiber in ruminant diets: From lab reports to rumen health When we talk about protein, starch, or fat in ruminant diets, fiber sometimes gets labeled as “filler.” 👉 But the truth is: fiber is the steering wheel of the rumen. It controls how much animals can eat, how efficiently they use feed, and whether the rumen stays healthy. 🔎 What is fiber made of? (Van Soest system) NDF (Neutral Detergent Fiber): hemicellulose + cellulose + lignin Main predictor of dry matter intake (DMI). More NDF = less intake. ADF (Acid Detergent Fiber): cellulose + lignin Related to energy supply. Higher ADF = lower digestibility (TDN/NE). ADL (Acid Detergent Lignin): lignin itself Indigestible “wood.” The more ADL, the less cellulose and hemicellulose microbes can use. 📚 How nutrition models use fiber CNCPS (Cornell Net Carbohydrate & Protein System): Divides NDF into pdNDF (potentially digestible) and uNDF (undigestible). uNDF240 (residue after 240 hours) predicts rumen fill and passage rate. Digestibility depends on kd (%/h), usually 2–6%/h. NRC (Dairy & Beef): Uses NDF, lignin, and peNDF to predict DMI, energy supply, and milk fat. Forages with less lignin and faster pdNDF improve intake and energy use. CVB (Netherlands): Reports NDFom/ADFom to calculate energy (VEM/VEVI) and fill values. More lignin/uNDF = less energy, reduced intake. 👉 In simple terms: Too much lignin/uNDF → animals feel full too quickly, intake drops. Too little effective fiber → acidosis, milk fat depression, loose manure. 🌾 Physically effective fiber (peNDF) Not all fiber stimulates chewing! peNDF = NDF × pef (particle effectiveness factor). pef = % of particles >1.18 mm (Penn State shaker). Adequate peNDF = stable rumen pH, good cud chewing, healthy milk fat. Without enough peNDF, even if NDF is “on paper,” the rumen is at risk. 📌 Practical target ranges (per NRC, CNCPS, CVB, INRA) Dairy cows (high yield): NDF: 28–34% DM Forage NDF: ≥19–21% DM peNDF: ~19–21% DM uNDF240: 9–13% DM Beef finishing cattle: NDF: 20–28% DM peNDF: 12–15% DM Dairy goats: NDF: 28–35% DM peNDF: 17–20% DM Note: goats sort feed → monitor particle size. Sheep: Finishing lambs: 25–30% NDF Ewes (gestation/lactation): 30–36% NDF Balance uNDF: too high = poor intake; too low = digestive upset. ✅ On-farm checklist Always ask for NDFom, ADFom, ADL, and uNDF240 if possible. Don’t let grain overload without enough effective fiber. Corn silage TLC 1.5–2 cm, include some long hay. Observe animals: Cud chewing: >55% of lying cows chewing = good Manure: firm, not watery, little undigested grain Milk fat: butterfat-to-protein ratio >1.2 in dairy 🚀 Take-home message Fiber is not just bulk — it decides intake, efficiency, and animal health. NDF, ADF, ADL, and peNDF connect lab reports to real-life performance on the farm. Hello world, I had several discussions around precision fermentation and its future with some of my former customers and the VC crowd. I always get asked the same questions: Eva, do you still believe in the technology? Yes, it has become very quiet around precision fermentation. There are fewer conferences to the topic, and even the biggest players often no longer attend. One reason is that a lot of money was pumped into alternative protein a few years ago. Many startups in the intersection of #biotech and #foodscience have already stopped operations. The slowdown from VCs reflects a broader shift: many funds without experience in #finance, technology, or #entrepreneurship followed the hype but lacked the capacity to provide follow-on or bridge financing. Founders feel this acutely when they share their experience with investors. At the same time, inflation and economic uncertainty have forced #corporates into survival mode. Long-term innovation strategies are being postponed, and precision fermentation still falls into that category. But I still strongly believe in precision fermentation and its future and here is why: 1. Shrinking milk pool: Many governments, e.g. Denmark, the Netherlands, and Ireland, are limiting the number of cows. The result is a shrinking milk pool, which drives price volatility. Dairies are deeply concerned, as declining milk availability directly threatens revenue. 2. Climate impact: Changing weather patterns — droughts, floods, rising temperatures — directly affect feed crop yields and animal health. Precision fermentation decouples protein production from climate volatility, providing resilience and predictability. 3. Resource efficiency: Dairy and meat production consume enormous amounts of land, water, and fertilizer. Precision fermentation requires only a fraction of these resources. 4. Policy & regulation: Governments are setting ambitious targets for carbon reduction, methane mitigation, and biodiversity protection. Precision fermentation is one of the few scalable tools available to meet these goals, and supportive policies are beginning to emerge. 5. Consumer demand: Younger generations and urban populations continue to demand sustainable, animal-free proteins. Precision fermentation delivers identical functional proteins that plant-based alternatives often cannot. So, precision fermentation is not a passing trend. It addresses systemic challenges in agriculture, climate, and food security. The current silence should not be mistaken for irrelevance, it is a necessary consolidation before the next growth wave. I still highly believe in precision fermentation and I strongly believe, that early adopters will be the big winners in the game. PS: A few years ago, when I lived in Bali, I walked home from a bar with a friend, and we found that little cute calf on the middle of the street. It was so curious and friendly, that I had to hug it. I highly recommend hugging cows over eating them!

A German startup, Tomorrow Bio, is part of a growing field of cryonics, offering full-body cryopreservation services. This process involves cooling a legally deceased person's body to extremely low temperatures, with the ultimate goal of preserving cells and tissues from decay. The company's service is based on the hope that future medical advancements will possess the technology to repair the damage caused by the initial cause of death and the freezing process, and ultimately revive the individual. The procedure requires a rapid response team to begin the cooling process immediately after death to maximize the chances of successful preservation. Cryonics remains a highly speculative and controversial field, as there is currently no scientific proof that revival is possible. Mainstream scientific opinion largely views it as a form of wishful thinking, given the immense challenges of reversing cellular damage from both the original cause of death and the cryopreservation process itself. However, the increasing number of people signing up for these services, including over 650 clients for Tomorrow Bio, highlights a profound human desire to overcome death and the growing belief that future technology may hold the key to immortality.
