Review Redis + Sentinel node guidance

Currently we recommend not colocating Redis and Redis Sentinel in the Reference Architectures. We were advised to not do this last year out of concerns for quorum and blast radius concerns.

However the Redis docs currently do recommend colocating the two components and it's understood that this is being done on .com.

Task is to review this and sync up the recommendation across the board for consistency.
