    Why is the taste and nutrition of our food in decline? Many blame declining soil health. And yes, the biology of soil plays a massive role in mediating nutrition to plants. But the story is much bigger. Agriculture is a complex system where genetics, soil, weather, fertilizers, and management practices all interact. Over the last 40 to 60 years, we’ve selected for plants and animals that grow faster and bigger. The result? More yield, more calories, but less nutrition per gram of food, less tasty food! Formally, genetic dilution is the reduction of desirable traits within a population when genes linked to less favorable traits dominate. In agriculture, it shows up as lower nutrient density, weaker flavor, and the loss of other quality traits in crops and livestock. Put simply, breeding programs have traded quality for quantity. Modern wheat often contains less zinc and iron than older lines. Rapid-growth livestock breeds tend to have less flavor and lower nutritional value than heritage breeds. For decades, we’ve been breeding for one outcome: more yield. The implications are profound. Does less nutrition per gram make us eat more? Are we less satiated because our food carries fewer micronutrients and bioactive compounds? If we keep breeding for abundance, what happens when abundance no longer nourishes us?

  • California AB 899 is raising the bar for baby food safety. All baby food sold in California must disclose heavy metal levels on the label for every lot. Edacious now offers full compliance testing and reporting tools to help brands measure, understand, and communicate heavy metal concentrations, ensuring products meet safety limits in the U.S. and Europe.     Baby food safety is getting a face lift thanks to California law AB 899. Starting earlier this year, baby food companies selling in California are now required to disclose the levels of heavy metals like lead, arsenic, cadmium, and mercury on their labels — every lot, every time. It’s a major step forward in transparency and consumer trust. Consumer Reports, in partnership with Unleaded Kids, just released their assessment of how baby food companies are complying. I'll be speaking in the Soil Health Tent at 10am on “Measuring Food Quality, Nutrition, and Health.” Joining me are two extraordinary voices: - Dr. David Unwin, renowned for using food—not pharma—to reverse chronic disease - Matthew Adams, whose GRFFN program is engaging farmers in citizen science to validate crop quality across the UK. I’m especially excited to catch up with our friends at Wildfarmed —and to share results from our first round of Edacious testing with the brilliant Edd Lees and Ria Kalantzis, which involved testing everything from farm gate samples to milled flour currently hitting the shelves of Sainsbury's and now Tesco!     Land is Kin. That was the headline for the Old Salt Co-op Festival this past weekend, held on Cole Mannix's family ranch. Edacious was proud to sponsor this remarkable community gathering. The experience brought my career full circle in a way I hadn’t fully appreciated until standing on that land. The festival’s theme—A Celebration of Land Stewardship—was a powerful reminder: the truest stewards are those who work the land daily. None are more vital than our ranchers, who care for hundreds of millions of acres. People are always surprised when I tell them I have a Master of Forestry. I began my journey in ecosystem work, exploring how landscapes can help mitigate and adapt to climate change. I focused on how to manage forest ecosystems through the lens of carbon, water, and biodiversity markets and how they might influence land management. That led me to innovation—examining how technology and business models could drive change. But without strong policy or market signals, those tools often too fell short. So I shifted to market incentives. Now, my work centers on creating a signal in the market—anchored in food quality—that directly links land management to the quality of the food it produces. It’s the most tangible feedback loop I’ve found, connecting consumer health to soil health and agricultural practices. That was the essence of the event. Connecting the dots between land stewards and eaters who reap the bounty of the land everyday. It was incredible to taste the diversity of plates from amazing chefs preparing food directly from the land we were standing on. And the journey wouldn’t have come together without my time on the board of Steward and working alongside Dan Miller. Finance plays an indispensable role in enabling these transitions. Old Salt is a great example of this work; I'm excited to see Cole and the Co-Op change our understanding on how unique organizational structures can play a role in evolving how resources are distributed.     BEEF is not BEEF is not BEEF...?! I am thrilled to announce a first-of-its-kind collaboration between Edacious, Bionutrient Food Association, and Utah State University, bringing science, agriculture, and technology together to explore the nutrient density of beef—and what drives it. Early results are in, and they’re transformational to the industry: 🥩 Nutritional quality is not fixed—it’s shaped by feed, genetics, environment, and management practices. Not all cows are created equally! 🌱 Grass-fed beef from diverse, polyculture pastures had over 100% more omega-3s, more phytochemical antioxidants, and a healthier fat profile. 🧪 Grain-fed beef had higher levels of some B vitamins and minerals—showing each system has complexity, and nutrient density isn't one-size-fits-all.
