A few years ago, someone asked me why we don’t rely on part-time help or temp workers like many others in hospitality. The answer is simple: we employ all of our staff directly, full-time and part-time. Every team member you see at our events or in our kitchens works for us, is on our payroll, and receives benefits and 401K plans. Chef Devon Quinn is sharing one of the coolest spring ingredients we’re working with, Norwegian spruce tips. Foraged in Traverse City and packed in Ellis Family Farms honey from @greencitymarket to naturally ferment, these tips carry wild yeast and develop incredible depth and complexity over time.
