There are more Chinese restaurants in the United States (over 45,000) than McDonald's, Burger King and Wendy's combined. Ever since the Gold Rush in 1848, entrepreneurial Chinese immigrants have opened Chinese restaurants as a means of survival. Chinese men who came for the Gold had to learn how to cook and launder their clothes themselves. Many of them operated "chow chow houses" to serve miners and growing rural communities and adapt to their tastes, creating a new Chinese American cuisine. So many immigrants come to America where their degrees are no longer recognized, but they come in the hopes of a better life. They open restaurants to support their families and their children grow up helping the family operate them. One of the most famous Chinese restaurants in America is House of Nanking started by Chef Peter Fang in 1988. His daughter Kathy Fang grew up in that restaurant where she learned to cook herself and eventually opened her own restaurant Fang. She would go on to gain notoriety herself as a personality on the Food Network. For the first time in 37 years, Peter and Kathy are sharing their culinary secrets in a new cookbook: House of Nanking: Family Recipes from San Francisco's Favorite Chinese Restaurant. Beloved by San Franciscans and visitors from around the world alike, including Keanu Reeves, who feature the restaurant in The Matrix Resurrections. So many of us wish we could thank our immigrant parents for their sacrifice. And Kathy was able to do so with this book. This is a love letter from Kathy to her parents, who sacrificed so much for her and built their American dream in a House of love and Chinese food. We rarely hear the stories or get to recipes from this generation of immigrants because they’re too busy working to tell them. But these stories are important to share.
