Stuffed Chicken Wrapped in Bacon
(Serves 4) Red Day
Ingredients:4 large chicken breasts, skinless and boneless 8 trimmed rashers of bacon For the stuffing: 1 red onion 2 tsp lemon juice 2 tsp dried sage 18-g lean pork mince 1 egg yolk Seasoning
Method:Firstly make the stuffing: Chop the onion and mix in the lemon juice Add to the onion mix the sage and pork mince and mix well Season and bind with the egg yolk For each chicken breast: Using a small sharp knife make a pocket in the chicken breast Fill with a of the stuffing, then wrap with 2 rashers of bacon, ensure the rasher ends meet at the bottom of the chicken to secure the stuffing Bake in a preheated oven at 180 200c for about 1 1 hours until the chicken is cooked Transfer to a preheated grill to crisp the bacon
