Assignment

Milkray Dairy Processors (Pvt) Ltd is a medium scale fluid milk processor located in Kandy,
Sri Lanka. It receives the milk supply mainly from the Central Province while some supplies
are received from the Eastern Province. The company has recently received a series of
consumer complaints about its pasteurized milk which has a regular shelf life of one week
under refrigerated storage. Consumers are stating that the milk has a fruity like odor and in
some cases there have been reports of bitter and fruity flavors with apparent curdling of the
milk in the pack. Consumers have been calling and lodging complaints at the Customer
Relations Department of the company and have also been returning milk to retail stores. The
retail stores are also complaining about lower sales of Milkray pasteurized milk and fewer
customers are buying the product compared to several weeks ago before the problems first
started to occur. The management of the company has decided to recall all their pasteurized
milk in the market and launch an immediate investigation of the issue.

Imagine that you are employed as a Dairy Technologist at the above company. Identify the
possible root causes for the above problem and prepare a report suggesting suitable remedial
measures to the management to address the problem.
