Electrical and mechanical devices used to chop, puree, slice, grind, mix foods and
extracting.
Examples: Slicer, mandolin, buffalo chopper, food processor, blender, planetary mixers,
dough kneader.

Gas, electric or steam operated appliances used for cooking and reheating foods.

3. Storage and Holding Equipment
These include all equipment used for storage of both raw and cooked food, holding before
service of cooked food.
Examples: Refrigerator, walk in freezer, chiller, holding cabinet, chaffing dishes, storage bin,
trolley, proofing cabinet.
