extracting.

3. Storage and Holding Equipment
 These include all equipment used for storage of both raw and cooked food, holding before
service of cooked food.

Examples: Refrigerator, walk in freezer, chiller, holding cabinet, chaffing dishes, storage bin,
trolley, proofing cabinet.
