Sodium metabisulphite is a white crystalline powder with the odor of SO2. It has a molecular weight of 190.12 and bulk density of 1.2-1.3 kg/dm3. It is at least 98% sodium metabisulphite with a maximum of 1.5% sulfate, 0.03% insolubles, 3 ppm iron, and 10 ppm heavy metals. It is commonly used as a preservative in food, as a bleaching agent in pulp/paper and textiles, and in chemical synthesis and water treatment. It absorbs moisture and oxidizes if not stored tightly sealed in a cool, dry place.
