Seq of service

1) Meeting and greeting the guest


- The service staff should greet clients entering the restaurant with a pleasant and
genuine smile, making the guests feel welcome and in the company of friendly
individuals. Ask whether they have a reservation. If not, ask about their preferred
dining location
2) Seating the guest
- Escort them with an open palm facing onto the table. Gently pull and push back
the chair for the guest to sit (Ladies first). DO NOT DRAG the chair.
3) Presenting the menu
- The beverage menu must come first, followed by the food menu. Menus must be
delivered to guests (ladies first) with the right hand open assisting with your left
hand at the bottom part
4) Taking placing beverage order
- Take their beverage order, suggest ideas and recommendations when necessary,
and then repeat the order before leaving the table. Thank guest after taking
orders
5) Taking the food order
- Assist the guest in choosing the best dish on the menu by employing suggestive
selling' or 'upselling' strategies. Take their meal orders and talk clearly and
calmly. Before leaving the table, repeat the order. Thank guest after taking orders
6) Serving the beverage
- Serve their beverage order while waiting. Always begin serving from the guest's
right. Handle the glasses from the bottom to refrain from any stains and accidents
7) Resetting the table
- Remove any unnecessary utensils and glasses from the table and set it up with
the appropriate utensils in line with their food order.
8) Serving the food
- Each course's service should be coordinated so that guests do not have to wait
too long between courses. Excuse yourself while presenting the meal order from
the proper serving side, and confirm the order when setting the food on the table.
Remember to thank your guests and enjoy their meal.
9) Clearing the table
- Before cleaning a course's plates, wait until all diners at a table have finished.
When everyone has finished their course meal, clear the food dishes from the left
and the beverages from the right. Clear the table from largest to the lightest
objects. To sweep crumbs onto a napkin or plate, use a crumber or folded napkin.
10) Offering dessert & after-dinner drinks
- Excuse yourself and ask whether they would like dessert or an after-dinner drink.
Confirm their order and repeat it. Before leaving the table, thank the guest.
11) Serving the dessert & after-dinner drink
- While stating the order, excuse yourself and serve them desserts and beverages.
Confirm their orders if it's complete. Offer the guest further assistance they may
need and thank the guest and enjoy their dessert before leaving
12) Presenting the bill
- Ensure that the bill is accurate. Always double-check the bill before handing it
over to the visitor. Excuse yourself and deliver the bill, ensuring that the charges
and details provided are exact, as well as the method of payment. Thank the
visitor before proceeding to the cashier.
13) Bidding goodbye
- Return to the guest and hand over any remaining change. Assist the guest by
pulling out the chair. Thank the guest and hope to see you again soon.
