FOOD PRESERVATION – Lesson 5

ANALYSIS PHASE

Audience:
This project targets a primary audience of student in junior high school level who are taking a
TLE 9 Cookery. It also benefits a secondary audience who are interested and wishing to use this
lesson whether a teacher or student.
Learning Style:
This lesson is intended to be used as a form of blended learning. It includes in viewing of pictures
of types of food preservation in a PowerPoint presentation and videos.
Physical environment:
The environment in which students go through the lesson may be in the kitchen lab where each
students works individually in making their chosen type of food preservation as their output.
Instructional Objectives:
A. Discuss what is the Food Preservation
B. Recognize the suitable types food that can preserve
C. Appreciate the importance when preparing foods preservation
Timeline:
15 minutes

DESIGN PHASE

Lesson Planning, Activities and Exercises:


The student watches a short video an introduction about Food Preservation.
A teacher will be asked first to his/her student to take down notes about the important details in
the video. And then asked to the students the definition of food preservation, how foods are
preserved, and why food need be preserved.
Assessment Method:
An exercise will be given first by the teacher before starting the lesson and serves also as
assessment for student. This game exercises will introduce by the teacher called “ARRANGE ME”.
Show a picture of example of a types of food preservation and the students will arrange the
given letters to reveal the answer.
Media Selection:
This lesson will be based on a power point presentation.

The power point itself will includes an explanation of food preservation with its type.
The student will read the definition of food preservation to have an idea in understanding of it.

The power point content will be made up of images that suit the provided explanation and
definition, examples and exercises.

DEVELOPMENT PHASE:
These are the list of the following types of Food Preservation that will be discuss in this lesson:
1. Drying
 Definition: This is the easiest and the most common method. The moisture content of
the food is removed.
Drying under the sun- food is salted and placed under the heat of the sun
Mechanical dryer- uses artificial heated air with the use of a machine.
 Example: tuyo, pork skin, monggo shrimp
2. Salting
 Definition: Application of salt to the food to be preserved.
 Example: bagoong, burong, manga, mustard, salted egg, fish sauce
3. Freezing
 Definition: This is a quick and convenient way to preserve food.
 Most foods freeze well—with the exception of produce with a high-water content, cream-
based items, and cooked starchy foods such as cooked noodles and rice. All fresh produce
contains enzymes, compounds that help the plant ripen and mature.
4. Refrigeration
 Definition: Food is kept at low temperature to prolong their freshness.
 Examples: eggs, milk, fruits, vegetables
5. Smoking
 Definition: This is a method in which food items such as cured meat or fish exposed to
smoke not only to preserve them but also to add flavor and color.
 Example: tinapa, tapa, longanisa, ham
6. Curing
 Definition: This method is done by soaking or injecting meat with preservatives like sugar,
salt, and vinegar solution.
 Example: longganisa, tocino
7. Pickling
 Definition: Adding pickling solution vinegar, salt and sugar to vegetables like grated green
papaya, ginger carrots, onion and bell pepper.
8. Sugaring
 Definition: Sugaring is a food preservation method similar to pickling. It is the process of
desiccating a food by first dehydrating it, then packing it with pure sugar.
9. Canning
 Definition: This is a method in which processed food is placed sealed in airtight cans.
 Examples: sardines, tomato sauce, pineapple sauce
Materials needed for lesson:
 Smart tv for power point presentation
 Laptop
Evaluation Phase:

Evaluate students at the end of discussion by answering the questions in the power point if they recall
the following types of food preservation (Multiple Choice)
Review the lesson in the part of “What I have learned”
Objectives of Food Preservation
Assignment: Read more about the other ways of preserving food.
