Welcome to the world of Food & Beverage Services!

This Module is an exploratory course which leads you to Food &


Beverage Services National Certificate Level II (NC II).

This module is prepared to help you achieve the required Learning


Outcome, Set the mood/ambiance of the Dining Area. This will be the
source of information that will enable you to acquire the knowledge, skills
and attitudes in this particular trade independently at your own pace or
with minimum supervision or help from your instructor.

- Talk to your trainer and agree on how you will both organize the
training of this unit. Read through the learning guide carefully.
It is divided into sections which cover all the skills and
knowledge you need to successfully complete this module.
- Use the self-check questions at the end of each lessons to test
your own progress.
- When you have completed this module (or several modules) and
feel confident that you have had sufficient practice, your trainer

Restaurant environments are generally fast-paced and require the
utmost efficiency. This is because customer service and the success of the
restaurant are heavily built around the flow with which a restaurant
operates -- customers placing orders, orders being fulfilled and then
delivered to customers. There are several ways to create a maximum level of
efficiency in a restaurant environment.
Dining Environment may include the following:

1. Lighting- You will probably need varying levels of lighting in your


restaurant. Lighting can make a dramatic impact on the tone of the
restaurant. Is the lighting bright and illuminating or dark and
depressing?

 Breakfast: lots of light is needed so that customers can read


the morning newspapers while enjoying their coffee and/or
breakfast.
 Lunch: If you are a fast food restaurant, a moderate level of
lighting will help to create a fast turnover of customers,
especially needed for lunch rushes.
 Dinner: The dinner hour requires a low intensity of light to
create an intimate and leisurely atmosphere.
 Fast Food Establishments - Use bright lights to attract
customers and to signify a place bustling with activity and
very fast service.
 Family dining Establishments - well-lit to give the
impression of fast service with decorative fixtures to create a
homey atmosphere.
 Fine dining - requires a low intensity of light to create an
intimate and leisurely atmosphere and imply a high-quality
meal. Low levels of lighting are generally associated with
higher prices and a high quality of service. Too dark and
customers can't see and enjoy the appearance of the
masterpieces your Chefs have created and could have
difficulty reading their menus. Also, you need to have enough
light so that your staff and customers don't trip or fall.
 Themed Restaurants - Use decorative lighting relative to your
theme and mood to create an atmosphere of fun and
excitement.

 Kitchen - This area should be well lit to prevent accidents,
increase efficiency, facilitate quality control and prevent waste.
Fluorescent light fixtures are recommended because of their
efficiency and cool operating temperatures.

Types of Lighting

Light can affect a customer's appearance. A light source at or


slightly above eye level is most complimentary to the face. Strong
overhead lights at sharp angles can accentuate skin wrinkles and
deep shadows around the eyes. Table lamps and candles provide a
complementary light source if glare is prevented.

 Up lights - shine upward casting pools of light on the surface


above them and when placed on the floor, behind plants, and in
corners, adds to the atmosphere by creating dramatic shadows.
 Down lights - positioned to cast a circle of light on the floor, table,
or any surface below, and can be recessed into the ceiling, ceiling
mounted, or hidden behind ceiling beams or dividers. They can
also highlight an entrance area, cashier's station, individual dining
room tables, flower arrangements, or the salad bar.
 Spotlights -These are used as accent lighting.
 Exterior lighting - The outside lights often make the first
impression your customers have of your restaurant and they can
attract customers passing by into your establishment

Lighted Signs, architectural highlights, entrance ways, and parking


areas need to be well lit. Outside lighting should provide safety by
illuminating steps, sidewalks, and other hazards and relay a sense of
security.

2. Room temperature- Atmosphere is made of everything that makes an


impression on people. The building design, décor, interior color scheme,
textures of the walls, colors, service and the food create the atmosphere.
The atmosphere should project the feelings of friendliness and comfort,
be attractive and interestingly different.

A comfortable warm room and hot foods portrays a feeling of high quality,
elegance and a slow leisurely meal. Fast food restaurants needing high
turnover to earn a profit usually keep the dining room temperature cooler in
the winter to encourage people to eat faster.

3. Music- Each piece of background music for a restaurant ought to be


chosen with as much care as each ingredient for the day’s specials. They
may have equal effects on guests. To this end, the last post posited the
dual theories that lyrics should be avoided and no one artist should be
given the floor for an entire CD.

To achieve a steady stream of suitable music — background music that


resides in the space between mundane and magical — one cannot rely on
radio, an online music service or a bartender with a stack of CDs. One
has to program every song. But there will be times, unfortunately, when
the iPod dock cracks and the cable conks out, when the satellite shifts
out of orbit and you are forced to play CDs from start to finish.

4. Floral & other decorations- Artificial flowers are a great way to go for
restaurant décor because you have no need to replace them as you would
fresh flowers. They are often also less expensive than real flowers and live
plants.

5. Privacy- It is the state or condition of being free from being observed or


distributed by other people and the estate of being free from public
attention. This Privacy Policy provides information on how Restaurant
manages personal information collected. The importance of ensuring that
personal information held by the company is treated confidentially and is
committed to ensuring that all personal information is only collected,
disclosed, used and stored in accordance with the National Privacy
Principles set out under the federal Privacy Act 1988.

6. Background noise- is any sound other than the sound being monitored
(primary sound). Background noise is a form of noise pollution or
interference. Examples of background noises are environmental noises
such as waves, traffic noise, alarms, people talking, bioacoustics noise
from animals or birds and mechanical noise from devices such as
refrigerators or air conditioning, power supplies or motors.

7. The floor plans- Your restaurant floor plan is a major component of


your restaurant concept. It sets the scene for your guests' dining
experience and separates you from competitors, but it's not just
about aesthetics. Restaurant seating layouts must meet
government regulations, accommodate the proper capacity, and
work with your floor plan. Consider the following four important
factors before opening or renovating your venue.

A place is clean when it is free from dirt and litter. Your location’s
cleanliness and sanitation may be one of the most important factors in
attracting new customers and in keeping the ones you’ve already got.
Cleanliness, so the expression goes, is next to godliness, and while no expert
would elevate the need for a tidy restaurant to the realm of spiritual
enlightenment, many are passionate about one point: Now is not the time to
slack on the suds.

According to a recent retail consumer study performed by M/A/R/C


Research and National In-Store, 14 per cent of consumers polled said they
would stop visiting a store that was not as clean as they would like.
Moreover, 29 per cent said they would continue visiting an unclean store
only if it was absolutely necessary. While this study focused on a wide range
of retail establishments, the quick-service sector would be wise to pay
attention to these figures.

Importance of cleaning tables and chairs:

Restaurants have high health standards that contribute to the


success of the establishment. It is a necessity to ensure tables are clean and
disinfected before another family sits at the table to eat. Along with
providing a fresh atmosphere, a clean table reduces the spread of germs and
illness from one customer to the next and prevents the negative comments
from the next customer.

Types of dining room chairs:

Dining room chairs are used as seating at a dining table. They are
available with arms, called armchairs, and without arms, called side chairs,
fully upholstered, partially upholstered, and without upholstery.

1. Upholstered chair has a seat and back that are padded and covered
with fabric or leather, whereas a partially upholstered chair has fabric
on only the seat or only the back.
There are several choices when it comes
to upholstered dining chairs. Some
will choose solid fabric, while others
may want to liven up their room with
patterned fabric. Many
individuals who choose to

upholster dining chairs will only cover the top half of the chair, or the
seat and back. Others will choose to cover the back, seat and legs.

2. Non-upholstered dining room


chairs may be made of wood, metal,
plastic, or cane. Common woods
include cherry, mahogany, walnut and
alder. Non-upholstered dining room
chairs are considered more durable than
upholstered dining room chairs
because wood, metal, and plastic do not
absorb food or liquids easily.

Types of restaurant tables

Table is a form of furniture with a flat horizontal upper surface used to


support objects of interest, for storage, show, and/or manipulation.

1. Two to four-person tables are the most popular restaurant table


design. Restaurant tables are typically sold in two components; the
table top and the base. Table tops are available in a variety of wood

and granite.

2. Bar Height Tables-High top or bar height tables are frequently used
at pubs and sports bars. A tabletop is secured to a 41-inch base to
create a high-top table. Refer to the specifics of the base to determine
the maximum size tabletop for that particular base. The base often
