The quality of the vanilla for the chef-hotel is Gourmet, namely
Vanilla Planifolia Andrew Vania 1 & 2 which is planted and cared
for with fully organic care from certified gardens in the Salatiga-
Semarang and Temanggung areas. Gourmet curing process can
take up to 1 year with several stages of the method and
fermentation as well as the stages of conditioning . With a
complicated and long time, special quality results are obtained
(Gourmet -French).
Gourmet quality usually has a water content of 30 % and some
even higher. Vanillin content (vanillin content) above 2.2% and
some even 3% Minimum pod length 16 cm Color dark brown -
