Ensaymada and Cheese Bread Recipe
Ingredients: Topping for
ensaymada:
600 grams all purpose flour Butter
1 cup water Sugar
½ cup white sugar Cheese
¼ cup oil
1 tbsp. yeast
1 pc. Egg
2 tsp salt
1 tbsp. vanilla
¼ cup evaporated milk
¼ cup butter
Procedure:
1. Mise-en-place. Measure all the ingredients needed.
2. Put all the dry ingredients into the mixing bowl and mix it well. Add all the liquid
ingredients then mix it altogether.
3. Knead the dough mixture until becomes elastic. After kneading the dough, let it rest for 1
hour.
4. After 1 hour, press the dough to release the air inside it. Weigh the dough for 50-80 grams
and begin to form a spiral for ensaymada and form the dough for the cheese bread with a
cheese filling.
5. Put an oil in a baking sheet for greasing, put the ensaymada and cheese bread on it.
6. Pre-heat oven for 15 minutes to get the desired temperature.
7. Bake the ensaymada and cheese bread for 15 minutes or until done.
Chiffon Cake Recipe
For batter: For meringue:
2 cups cake flour 8 pcs. Egg white
1 tbsp baking powder ¾ cup granulated white sugar
¾ cup granulated white sugar 1 tsp cream of tartar
½ cup oil
¾ cup milk
1 tsp vanilla
8 pcs. Egg yolk
Pinch of salt
Procedure:
1. Mise-en-place
2. Measure all liquid and dry ingredients.
3. Separate egg yolks from egg whites.
4. Put wax paper or bond paper into the tube pan, and then apply a small amount of oil for
greasing.
5. Pre-heat oven with 340 degrees temperature.
6. Combine all dry ingredients and mix it well, make a well at the center.
7. Add all the liquid ingredients then mix it well until it is lighter in color then set aside.
8. Beat egg whites until stiff and peak. Add sugar gradually and continue beating until stiff
and peak.
9. Combine batter mixture and meringue by using the cut and fold technique.
10. Put the mixture into the tube pan and bake it for 45 minutes or until done.
Simple design yet a delicious chiffon cake coated with boiled icing.

1 tbsp baking powder 1 tsp cream of tartar or calamansi 1 bar butter cup
1 tsp salt For Yema filling: 1/4 cup lard
1/3 cup of water ½ cup condense milk
8 pcs. Egg yolk ¼ cup flour dissolved in water
1 tbsp vanilla 1 tbsp. butter cup
Procedure:
1. Mise-en-place. Measure all liquid and dry ingredients. Separate egg yolks from egg whites.
2. Put wax paper or bond paper into the rectangular baking pan, and then apply a small
amount of oil for greasing.
3. Pre-heat oven with 340 degrees temperature.
4. Combine all dry ingredients and mix it well, make a well at the center.
5. Add all the liquid ingredients then mix it well until it is lighter in color then set aside.
6. Beat egg whites until stiff and peak. Add sugar gradually and continue beating until stiff
and peak.
7. Combine batter mixture and meringue by using the cut and fold technique.
8. Put the mixture into the rectangular baking pan and bake it for 45 minutes or until done.
While waiting, put the needed ingredients for yema filling in a cooking pot and stir it until
done in a low flame.
9. Invert the rectangular cake into a clean fabric or bond paper with confectioner’s sugar on
it. Put the yema filling on top of the cake then roll it carefully.
10. For buttered icing, beat the butter and lard together then put the egg whites on it. Put the
confectioner’s sugar gradually. Continue beating until it is lighter in color. Put the buttered
icing into the top of the swiss roll cake. Then decorate it with cherry or any edible
decorations.
Hawaiian Pizza Recipe
Ingredients:
For Crust: Toppings:
2 cups all-purpose flour Pizza sauce
2 tbsp. sugar cheese
1 tsp. salt ham
¾ cup warm water pineapple chunks/tidbits
1 tbsp. oil onion
Additional 1 tbsp. oil for greasing bell pepper
Procedure:
1. Mise-en-place. Measure all the ingredients needed.
2. Sift all the dry ingredients into a mixing bowl.
3. Combine the flour, sugar, salt and all the remaining ingredients for the crust then mix it
thoroughly.
4. Knead the dough until it becomes elastic. After kneading, let the dough rest for 30 minutes.
5. Put oil into a baking sheet then pre-heat oven for 15-30 minutes in a low temperature.
6. After letting the dough rest, flatten the dough with the use of rolling pin to achieve a thin
crust.
7. Pour out the sauce and other toppings into the crust and bake it for 15 minutes or until done.
Egg Pie Recipe
Ingredients:
For the crust: For the filling:
1 ½ cup all purpose flour 1 can (375 ml) evaporated milk
2 tbsp. white sugar 5 whole eggs
½ tsp salt 1 cup sugar
½ cup butter 1 ½ tsp vanilla
1 egg yolk 1 egg white (egg white from the same egg for the crust)
3 tbsp. cold water and 1 tsp yeast
Procedure:
1. Mise-en-place. Measure all the ingredients needed.
2. Combine all dry ingredients for the crust and mix it well, and then add all remaining
ingredients.
3. Knead it until it is elastic. After kneading, let the dough rest for 30 minutes.
4. While waiting for the crust, beat the whole eggs thoroughly. Put all the remaining ingredients
then mix it until done. Pre-heat the oven for 15 minutes in a low heat.
5. Put small amount of oil in a pie molder for greasing, and then put the dough mixture for the
crust.
6. Pour the egg pie mixture into the molder and bake it for 45 minutes or until done.
BREAD MAKING (ENSAYMADA)

CHOCOLATE COOKIES
Ingredients:
½ cup butter (softened)
¼ cup white sugar
½ cup brown sugar
1 whole large egg
2 tsp vanilla extract
1 ½ cup all purpose flour
½ tsp salt
¾ tsp baking soda
1 cup chocolate chips
Procedures:
1. Mise-en-place
2. Measure all dry ingredients
3. Measure all liquid ingredients
4. In a mixing bowl, combine ½ cup butter softened, ¼ cup white sugar and ½ cup brown sugar. Beat until
creamy using electric hand mixer or stand mixer. If it is okay,
5. Add 1 large egg and 2 tsp vanilla extract beat until combine well. If it is okay,
6. Add ½ cup APF, ½ tsp salt and ¾ tsp baking soda.
7. Add APF half to mixture. Then add remaining flour mixture mix until combine well.
8. Add 1 cup chocolate chips
Note: Shape into ball – refrigerate or rest for 30 min.
Bake at 350 degree fahrenheit for 10-12 min. or until done. Allow to cool.
VANILLA CHIFFON CAKE
Ingredients: Meringue:
7pcs. whole egg 7pcs egg white
1 cup white sugar ½ cup white sugar
2 ½ cups flour ½ tsp Lemon extract
2 ½ tsp baking powder ½ tsp cream of tartar
½ cup oil
¾ cup evap/juice
2 tsp vanilla
Pinch of salt
Procedure:
1. In a mixing bowl mix the dry ingredients (flour, sugar, baking powder, pinch of salt)
2. In a separate bowl mix the liquid ingredients (egg yolk, oil, evap/juice and vanilla) mix well until all
ingredients are all combine.
3. Make a well on a center of the dry ingredients and then pour the liquid into the center, mix until
everything is well combine.
4. In making the meringue using electric mixer, whisk the egg white until bubbles and then add the lemon
extract, add the sugar one at a time until stif.
5. Mix the batter mixture into meringue.
