Sweet Chili Sesame Chicken
Ingredients
1kg. chicken (leg part)
Oil
*Marinate *Breading *Spicy Sauce *Plating
4 cloves garlic 1 cup cornstarch 2 tbsp. butter sesame seed
½ tsp salt 1 crispy fry 4 cloves minced garlic lettuce
½ tsp pepper ½ tsp. pepper ½ cup ketchup lemon
2 kalamansi 3 tbsp. hot sauce cucumber
1 egg 2 tbsp. brown sugar white sauce
1 tbsp. liquid seasoning ½ tsp. ground pepper
1 tbsp. liquid seasoning
Procedure
1. Marinate the Chicken:
- In a large bowl, combine the 1 kg of chicken with 5 cloves minced garlic, ½ tsp salt, ½ tsp
pepper,2 pcs. Kalamansi, 1 egg, and 1 tbsp liquid seasoning.
- Mix well to ensure the chicken is evenly coated.
- Cover the bowl and refrigerate for at least 30 minutes.
2. Prepare the Breading:
- Place and mix the 1 cup cornstarch, 1 Crispy Fry and pepper in a separate bowl or shallow
dish.
3. Bread and Fry the Chicken:
- Remove the chicken from the marinade, allowing excess marinade to drip off.
- Dredge each piece of chicken in the breading, ensuring it's fully coated.
- Heat enough oil in a large skillet or deep fryer to a temperature of 350-375°F (175-190°C).
(Use a thermometer to check the oil temperature for best results.)
- Carefully place the breaded chicken pieces into the hot oil, ensuring not to overcrowd the pan.
Fry in batches if necessary.
- Fry the chicken until golden brown and cooked through, about 6-8 minutes per side, or until the
internal temperature reaches 165°F (74°C).
- Remove the chicken from the oil and place it on a wire rack or paper towel-lined plate to drain
excess oil.
4. Make the Spicy Sauce:
- While the chicken is frying, prepare the sauce. In a bowl, combine the minced garlic, ½ cup
ketchup, 2 tbsp sugar, 3 tbsp hot sauce, 1 tsp pepper, and 1 tbsp liquid seasoning.
- Cook over medium heat with 1 tsp. oil and 2 tbsp butter, stirring frequently, until the sauce
thickens slightly. This should take about 5-7 minutes. Adjust the amount of hot sauce to control
the spiciness level.
- Drizzle the spicy sauce generously over the chicken.
5. Plate and Serve:
- Arrange the fried chicken on a serving platter.
- Garnish with sesame seeds, lettuce, and lemon wedges as desired.
-Add the readymade white sauce to balance.
- Serve immediately and enjoy!
