I have some
insight here.
Long line is scared, but I like it.
People are scared of the lone line in front of the restaurant, but
they are also attracted by it. In my interviews, 5 of 7 interviewee
mentioned the long line drived them crazy. However, 3 of 7 inter-
viewee said that they came to the restaurant because they saw
the lone line. They were curious and believed it won’t be a bad
restaurant. Actually, even though all of interviewee waited over
40 minutes, they still think it’s worth. People hate waiting, unless
the value of the thing they waiting for is enough. The long line is
one of ways to proof the value.

Service
is
the best condiment.
It’s hard for a restaurant to satisfy every customer’s taste. Every
one has different taste of food. Specially in U.S., there are so
many people here from different places of the world. However,
I know a secret condiment which can make the more tasty. It’s
good service. All interviewee metioned the good service before
the taste food. Copmare with the flavor of food, nobody doesn’t
like the service here. What makes the interviewee feel the ser-
vice is good. The answers are friendly and courteous. If a waiter/
waitress can be friendly and courteous, it can be good taste.

Substitution
is not necessary.
2 of 7 interviewee metioned it’s weird that there is no substitution if
there are some materials that they don’t like. Usually, the restaurants
in U.S. have the service of substitution. However, I think it’s not re-
ally necessary. It’s easier for the restaurant to prepare the materials
of hot pots. There are too many knids of materials in each hot pot.
If substitution is available, the quality of service will be lower. Also,
people usually take out the materials taht they don’t like by them-
selves. Even the interviewee who metioned this issue, they were fine
of this issue definitively.
We are fine with no substitution.We want substitution.
