CHICKEN WITH GARLIC
SAUCE
HISTORY:
Chicken in garlic sauce is traditionally prepared by quickly frying the chicken in olive oil
with garlic cloves. The seasoned oil is then served as a sauce. The recipe has infinite
variations, though. This version uses less oil; includes wine, saffron, and chili pepper; and
is slow-cooked for extra succulence.
INGRIDIENTS:
 1/3 cup flour.
 1 tsp. salt.
 ¼ tsp black pepper.
 ½ tbsp oregano, dried.
 2-3 tbsp olive oil.
 1 kilo chicken whole.
 1-5 cloves garlic.
 2 ½ cups chicken stock.
 2-3 pieces bay leaves.
 1 250ml pack of thick cream.
PREPARATION:
 Remove the chicken skin, cut into 7 pieces. wash and pat dry.
 In a shallow plate, mix flour, salt, pepper and oregano. Dip the chicken pieces in this
mixture to coat well. Keep aside. (keep the remaining flour mixture).
 Heat olive oil in a medium sauté pan. Place the chicken pieces in skillet. Uren them
occasionally and cook until they are golden brown on both sides. remove chicken
from the pan and place aside, leaving the oil in the skillet.
 Put the garlic cloves in the pan, and sauté and until they began to turn slightly brown
and become soft. Add the remaining flour mixture.
 Leaving the garlic in the pan, add the stock and bay leaves, stir thoroughly. Return
the chicken pieces to the pan. cover and simmer for approximately 20-25 minutes.
Remove the chicken from the pan and keep the warm.
 Turn the heat to high and allow and liquid to boil down and reduce by about half the
amount. Pour into blender and puree the sauce. Return the contents to the pan, add
the thick cream and heat.
 Thoroughly. Pour the sauce over the chicken pieces, and serve hot.
