The document evaluates the antioxidant capacity and phenol content of five vegetables commonly found in Kolkata, India: carrot, cabbage, broccoli, jackfruit seeds, and pumpkin. Extracts of the vegetables were analyzed for their ability to scavenge radicals and chelate metals using various assays. Total phenolic and flavonoid content were also measured. Results showed broccoli and jackfruit seed extracts had high antioxidant activity that correlated with phenol and flavonoid levels, while carrot and cabbage had less antioxidant capacity despite high phenol/flavonoid content. Pumpkin extracts exhibited very high antioxidant activity with relatively lower phenol/flavonoid levels than other vegetables. The study concludes pumpkin is a good source of antioxidants
