  8          FREEZING PROCESSES‐  A COMPARISON  COLD STORE FREEZING(Blast Freezing) Cold Store freezing is widely used and big volumes of foods are frozen with this method. The reason is the relatively low investment costs. Power consumption is also low. This method, combined with forced directed air and separation is still a good solution for packed big products like whole chicken, packed meat and other protected products. Fruits and vegetables are normally frozen spread out on trays. Freezing time is however long. For big products there is really no commercially available method that can do freezing faster as the product itself acts as insulation and it takes long time for the heat to be removed from the product. INDIVIDUAL QUICK FREEZING (IQF) The trend in food freezing is from Cold Store freezing to in-line IQF freezing. There are a number of product quality reasons for this. Here we will only comment on quick freezing of naked small products that normally are frozen in an IQF freezer. COMPARISON SLOW FREEZING TO IQF FREEZING Slow freezing The expansion of water during freezing leads to bigger ice crystals that stresses the delicate structures, membranes etc, which do not relax back on thawing. Quick freezing Expansion of ice crystals are limited and structures and membranes are not destroyed. Negative effect of freezing is strongly reduced.
