GREEN PAPAYA SALAD
*****NOTE : If you can't find green papaya in your country, you can change with
CUCUMBER or FREEN MANGO
I/ INGREDINENTS
- -Green papaya : 100gram
- -Carrot :30 gram
- -Fresh mint leaves :5 gram
- -Tofu : 50 gram
- -Mushroom : 10 gram
- -Lemon or lime : a slice of lime
- -Spring onions : 1 gram
- -garlic : 1 tea spoon
- -mushroom powder : 1 tea spoon
- -Peanut : 3 spoons
- -Black pepper : ½ tea spoon
- -Sugar : 1 teaspoon -Chili -soya sauce : 2 teaspoon
II/ INSTRUCTIONS
- Step 1:
Prepare the green papaya and carrot. Peel the skin, and cut the papaya in
half. Remove the seeds, wash the papaya in the water, then grate the papaya by
a rolling knife (grater). Carrot also peel skin and grate it
Deep grated papaya in ice + water for 15 minutes to make papaya crispy
Drain the papaya and carrot well. -
Step 2: - Fried tofu. - Slice mushroom and tofu, put in the bowl. Then
add some spice in mushroom and tofu ( 1 tea spoon of mushroom power, haft
tea spoon sugar, haft tea spoon black pepper, 1 tea spoon garlic, 2-3 tea spoon
spring onions, 2 tea spoon soya sauce, if you like chili you put some chili in =>
mix it)
• Start to stir fried mushroom + tofu.
• Put the pan on the hit with 2 tea spoon oil, then add some garlic/shallot to
make flavor. Wait for it have good smell and have bubbles, add all mushroom
and tofu in, stir for 30 seconds, then add 150ml water).
•maximum heat and wait for water thicken, just keep a little bit, it become
sauce, then we can you it to mix with papaya and carrot. •when it thicken, we
need to wait for it cool before we mix with papaya and carrot
Prepare the fresh mint leaves and wash them in the fresh water.
- Step 3: To prepare the salad mixture, put the papaya and carrot into the bowl
and some fresh mints on top. Pour all mushroom and tofu to the bowl with
papaya and carrot, and squeeze the lemon or lime in the bowl. After mixing,
taste the mixture – the sweet - sour taste must be balanced. Put the salad on the
plate, sprinkle the peanuts on top.

VIETNAMESE RICE PANCAKE
Rice pancakes – together for one tasty and cripy breakfast and snack!
Rice pancakes or Banh Xeo - attracted tourist’s taste, is popular on list
of Vietnamese street foods. Have you ever wondered why rice pancakes are
called Banh Xeo? This name literaly translates to “sizzling cake”, after rice flour
is poured into a hot pan, creating the sound of sizzling.
I. INGREDIENTS
For 5 pancake
- Rice flour : haft bowl
- Crispy fried powder: haft bowl
- fried tofu/mushroom/carrot : 50 gram
- Bean sprouts : 50gram - : 300g
- Spring onion : 5 gram
- Turmeric powet : ½ tea spoon
- mushroom powder: 1 tea spoon ( salt instead)
- Vegetable oil: 4 tea spoon
II. INSTRUCTION
Step 1:
Prepare the flour for pancake. Take haft bowl of rice flour and haft bowl of
crispy fried powder. Pour the two kinds of the flour into the big bowl. Take ½
teaspoon of turmeric power ,1 tea spoon of mushroom power) Add 1 big bowl
of water in,mix it , then add chopped spring onions into the bowl. Add 2 bowl
of water into the bowl.. Leave it in 30 minutes.
Step 2:
Put the pan on the heat with maxium heat . Add four teaspoons of
vegetable oil into the pan. Wait for the oil hot (when you see smoke)
Take 2 ladle spoons of the flour into the pan. One spoon speads the outside
of the pan and the other fills into the middle and the gaps on the pancake.
put 4-5 slice mushroom/tofu to the pan
Add alittle bit bean sprouts
Wait about 2 munitues for pancake being crispy. Use the spatula to fold it
in half, wait for 30 seconds, then you flip it. Take it out and put on the
racket to drain all the oil.
Finally, you enjoy your pancakes with the peanut sauce
(You can eat pancake like our VietNamese style : using ricepaper , put haft
pancake in, put some lecture, mint, lemonbasil, watercress and cucumber, then
roll like spring rolls) => dipping with sweet and sour soya sauce or hoisin
sauce

BRAISED FISH IN CLAY POT
Fish in clay pot – one of Vietnamese local dishes
When we are getting tired of eating out and missing home style food,
fish in clay pot is the best food for you to cook at home. Below is the recipe for
this dish.
I. INGREDIENTS
- Seabass /Eggplant/Tofu + mushroom : 200g
- Tomato
- Ginger (chopped) : haft tea spoon
- Garlic (chopped) : 1 tea spoon
- Spring onion (chopped) : 2-3 pea spoon
- Fish sauce : 1 tea spoon
- oil : 2 tea spoons
- Soyage sauce: 2 teaspoon
- Sugar : haft teaspoon
- mushroom powder: 1 teaspoon
- Chili sauce: up to you
II. INSTRUCTIONS
STEP 1:
Slice the fish/eggplant/mushroom + tofu and wash it in the fresh water. Put
the fish into the clay pot.
Chop the ginger and galics into small pieces.
Cut the spring onions into small pieces.
Wash tomatoes with water and slice them anyway, then put them into the
clay pot with fish/eggplant/tofu + mushroom

Put in claypot 1 spoon mushroom powder, haft spoon sugar, haft
HOI AN SPRING ROLLS
Vietnamese deep fried spring rolls – Classic Nem Rán
Spring rolls are nothing special and new to tourists but then you can find
them in every menu in Vietnam, they are prepared in varied ways: fried,
steam or fresh, and combined with seafood, chicken or pork. The different
styles depend on which part of country you are on. Here we have the recipe
of Hoi An spring rolls.
I/ INGREDIENTS
- Fried or fresh tofu : 150gram
- Carrot : 30gram - mushroom : 20gram
- peanut: 3 teaspoon (you need to crush ít)
- Rice paper : - mushroom powder : 1 tea spoon
- Black pepper : ½ teaspoon -Spring onion : 4 tea spoon
- Galic: 1 tea spoon
III. INSTRUCTIONS
Step 1: Chop the spring onions, garlics into small pieces. Cut the near-
root spring onions into parts about 7cm. Grate carrot then choppep it smaller.
Chopped mushroom, tofu ..put all of it in the bowl. Add 3 spoon peanuts, 1
teaspoon mushroom powder, haft teaspoon pepper, 1 spoon garlic and 4 spoon
spring onions. Mix ít
Step 2: Put one rice paper on the plate. Add 2 table spoon of the mixture
to ricepaper, roll tight until the middle, fold both sides of ricepaper tightly ,
then rool tightly untill the end
Step 3: Preapre the hot oil and deep fry it, the way you fold you pun in
down, you fry it until it getting a little brown, turn the other side, Take it out,
shake to take out the oil and put on a racket to drain the oil. Enjoy your spring
rolls with the soy source.
